Easy Sprouted Lentil Dal
Makes 6 servings, gluten free & vegan
WHAT YOU’LL NEED
- 1 ½ cups Sprouted Lentils (2-3 days of sprouting)
- 1 carrot, diced
- 1 small sweet potato, diced
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 1 knob ginger, minced
- 1 Tbsp olive oil
- 3 cups vegetable broth
- 1 cup coconut milk
- 1 ½ tsp ground cumin
- 1 Tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp smoked paprika
- Salt & pepper, to taste
- More sprouts for topping (optional – we love Crunch Time sprouts)
HOW TO MAKE
- Heat olive oil in a pot & sauté onion until soft. Add ginger, garlic, carrot, potato, and spices and stir a few minutes until fragrant.
- Add maple syrup (optional) and vegetable broth. Boil & let simmer for 10 minutes.
- Add coconut milk and sprouted lentils. Turn off the heat and cover the pot for 5 minutes.
- Adjust seasoning with salt and pepper as needed. Serve over warm rice and top with fresh Crunch Time sprouts as desired!
