Easy Sprouted Lentil Dal       

Makes 6 servings, gluten free & vegan

WHAT YOU’LL NEED

  • 1 ½ cups Sprouted Lentils (2-3 days of sprouting)    
  • 1 carrot, diced
  • 1 small sweet potato, diced
  • 1 large onion, chopped 
  • 4 cloves of garlic, minced 
  • 1 knob ginger, minced  
  • 1 Tbsp olive oil 
  • 3 cups vegetable broth 
  • 1 cup coconut milk 
  • 1 ½ tsp ground cumin 
  • 1 Tbsp curry powder 
  • 1 tsp turmeric powder 
  • 1 tsp smoked paprika 
  • Salt & pepper, to taste
  • More sprouts for topping (optional – we love Crunch Time sprouts)       

HOW TO MAKE  

  1. Heat olive oil in a pot & sauté onion until soft. Add ginger, garlic, carrot, potato, and spices and stir a few minutes until fragrant.  
  2. Add maple syrup (optional) and vegetable broth. Boil & let simmer for 10 minutes.  
  3. Add coconut milk and sprouted lentils. Turn off the heat and cover the pot for 5 minutes.  
  4. Adjust seasoning with salt and pepper as needed. Serve over warm rice and top with fresh Crunch Time sprouts as desired!
