Golden Sprouted Hummus

What You’ll Need

• 2 cups sprouted mung beans or garbanzo beans 

• ¼ cup tahini 

• 2 tbsp fresh lemon juice

• 1 small clove garlic, minced

• 2–3 tbsp extra virgin olive oil

• ½ tsp sea salt (to taste)

• ½ tsp ground cumin

• ½ tsp ground turmeric

• ⅛ tsp black pepper (to activate turmeric’s benefits)

• 2–4 tbsp cold water (to adjust smoothness & texture) 

• Garnish: olive oil drizzle, sprinkle of turmeric or paprika

How to Make

1. Prep the beans: Steam or simmer gently for about 5–10 minutes until tender but not mushy. Drain and let cool slightly.   

2. Blend: In a food processor, combine mung beans, tahini, lemon juice, garlic, olive oil, salt, cumin, turmeric, and black pepper.

3. Adjust texture: With the motor running, slowly drizzle in cold water (or olive oil) until the hummus is creamy and smooth. Taste and adjust salt, lemon, or spice as desired.
